How is Karupatti Made?
In the process of making karupatti, tender sap is drawn out from palm seedlings in clay vessels coated inside with slaked lime, that is collected such that it is not fermented.
The filtered sap is then heated in iron vats until it becomes a foamy consistency. Then, it has been cooled and poured into molds, made from coconut shells, as it solidifies.
